Dreamy Blueberry Smoothie

Ingredients: 

1 1/2 cups water or nut milk

1/2 cup frozen blueberries

1 soft Medjool date, pit removed

2 TBSP almond butter

1 TBSP chia gel (recipe below)

1 TBSP shredded unsweetened coconut

To make chia gel:

  • 3 TBSP chia seeds
  • 1 3/4 cups water

Mix chia and water in a small bowl or cup and allow the chia to soak up the liquid for 20-30 min.  Store in an airtight container in the fridge for up to one week.

Directions:

Blend until smooth (approx. 45 seconds) and enjoy!
